Right after a recent snow storm, a friend of mine posted on Facebook that she had made snow ice cream. How fun! I didn’t even know this was possible! With all the recent snow and sub zero temperatures, school had been cancelled beyond the holiday break and my 9 year old son Thompson was getting antsy. Thompson’s mind works like mine. “Snow ice cream?” he asks with doubt. Although a bit skeptical, he agreed to go snow collecting and help me give this simple recipe a go.
Some times the simple moments can be the most special. From the cheesy grin while collecting the snow, to the oohs and ahs of mixing and having ice cream magically appear in the bowl, this was a great SNOW DAY! Oh, and it was surprisingly good.
8 cups snow
1 can sweetened condensed milk (14 oz.)
1 teaspoon vanilla extract
Place 8 cups of clean fresh snow into a large bowl and pour sweetened condensed milk and vanilla over top. Stir until mixed and creamy. Magic!
