Instructions
  1. Preheat your oven to 300 degrees Fahrenheit. Lightly coat a large 15 x 10 inch jelly roll pan or two smaller baking pans with non stick cooking spray and set aside.
  2. Combine the rolled oats, almonds, cherries, raisins, brown sugar, salt and cinnamon in a large bowl and set aside.
  3. In a smaller bowl, whisk together the apple juice concentrate, water, oil, butter, honey, vanilla and orange zest. Pour your juice mixture directly over the oat mixture and stir until all the ingredients are completely incorporated. Spread evenly on your prepared pan(s)
  4. Bake the granola mixture, stirring every 15 minutes, until slightly crunchy and golden brown. This should take about 1 hour.
  5. Cool completely before removing granola from the pan(s). Once cooled, store in airtight plastic container or mason jars.
