Is everyone over winter yet? Goodness knows I am! I can not WAIT until the ground thaws and I can try my hand at gardening again. I have not had much luck in the past and I am determined to reap a harvest of something from my backyard this year. I swear, it seems like everyone in my family has a green thumb except me.
My dreams of gardening, coupled with the this years bitter cold winter has had me yearning for Spring more than ever. I plan on making a strawberry patch this year. Okay, I said it in public, now I am committed. I have heard that strawberries are one of the easier things for new gardeners to start. I certainly hope that is true. I plan on making jams, jellies, pies and fresh strawberry shortcake. I am very excited! Any suggestions will be very appreciate.
To practice my strawberry skills, I decided to try this super easy sugar free strawberry freezer jam recipe that I have seen floating around the internet. It is simply fresh strawberries and a 3 oz. box of sugar free strawberry gelatin.
As I cooked and poured the concoction into jelly jars, I listened to ABBA to put a “spring” in my step. (Sorry, I couldnt resist) But doesnt Abba always make you feel less blue and excited about life anyway? I LOVE this jam! But let me say this. If you are expecting a sticky yummy sweet type jam that we all love and are used to, you will be very disappointed. This jam is light and only slightly sweet. It tastes very fresh and you can really taste and enjoy the fruit.
Most sugar free jams that I have purchased seem to lack flavor. They tend to have a certain blandness, like a shadow of what jam should taste like. Not this jam. Although it lacks that certain sticky jam quality, it taste extremely fruit forward and fresh, surrounded by a bit of sweet without the cloying sticky feel. Does it taste like regular strawberry jam? No, it doesnt. But if you are trying to cut back on sugar for health or diet reasons, I think you will really enjoy it. I think I will be trying a strawberry rhubarb version next time.
