Dill and Feta Scrambled Eggs
Flavorful scrambled eggs, utilizing fresh dill and feta.
salt and pepper to taste
tsp olive oil for frying
TBL fresh dill, coarsely chopped (plus a bit more for garnish if you like)
pita – I used a small low carb 6 inch pita cut in half (Joseph’s!!)
In a medium bowl, whisk together your eggs, salt and pepper and feta
In a small non stick skillet, heat olive oil on medium.
Once your pan is heated, cook the egg mixture until eggs are set. (1-2 minutes) Scraping the bottom of your skillet often to create your scramble. – Stir in dill.
Spoon eggs into your pita halves and sprinkle with the remaining dill.
