Dill and Feta Scrambled Eggs

Dill is my newest food friend.  Recently, a friend of mine gave me some fresh dill from her garden, and I really didn’t know what to do with it. I actually almost just threw it out once it started to wilt a bit in my fridge. Oh my goodness, I am so glad I didn’t.  I am even more glad I thought to try dill in my scrambled eggs.  Truly and Seriously!!  My family and I eat a lot of eggs and are always on the lookout for something new to do with them. I don’t think I will get bored with these flavors any time soon.   Now I need to plant some dill in MY garden!

This recipe is super quick and simple and oh so tasty.  I have even had these eggs for breakfast and then lunch on the same day. Yep, that is how tasty they are.   Both feta and dill have strong fabulous flavors and together you can say good-bye to egg boredom.  Enjoy these delightful eggs in your favorite pita, or with a side of toast.

Dill and Feta Scrambled Eggs
Flavorful scrambled eggs, utilizing fresh dill and feta.
  1. In a medium bowl, whisk together your eggs, salt and pepper and feta
  2. In a small non stick skillet, heat olive oil on medium.
  3. Once your pan is heated, cook the egg mixture until eggs are set. (1-2 minutes) Scraping the bottom of your skillet often to create your scramble. - Stir in dill.
  4. Spoon eggs into your pita halves and sprinkle with the remaining dill.
