In a Dutch oven, or other heavy pot once heated to medium, add olive oil and sear beef chuck pieces on all sides.
Remove the beef and saute onions until they are soft. This will take about 5 minutes.
Add the rest of the ingredients and bring to a boil.
Return the beef chuck into the Dutch oven or pot; reduce heat until the liquid is simmering. Cover and cook until the beef chuck is melt in your mouth tender. About 2 – 3 hours. Serve over polenta or rice.
